Brown stew chicken @ RayRayz Carribbean Cuisine

Positioned halfway between Dingle and the Baltic Triangle, RayRayz is somewhere for years I only ever passed on the bus. But I’d heard it was very much worth a try, and for one particular reason.
The cafe’s menu, which is chalked on a small board next to the its front door, doesn’t change much day to day. Curry goat, jerk chicken, peppered steak, fried fish — all served with a selection of sides – earthy and fruity rice and peas; sharp and creamy slaw; sweet, caramelised fried plantain.
The pick here, though, and the reason I was first told to make a visit, is the brown stew chicken. Incredibly moist chicken thigh which collapses off the bone and into the deep, aromatic sauce, heavy with warming black pepper and allspice, cut with the sweetness of (I think?) coconut sugar. And it’s better still with a few dashes of Dunn’s River on top. I don’t believe I’ve tasted a better version than this. Delicious. Make it your mission to try it.
