Cacio e Pepe butter beans @ Buyers Club

If someone is visiting for the first time, the Buyers is one of the places I always recommend. A bar-restaurant with a nice laid back atmosphere and a great menu. It’s one of the few exceptions to my usual Liverpool golden rule — if the bar is good, the food will be crap.
Dining choices at Buyers Club include a half-dozen pizzas and pastas, with the options changing seasonally. The highlight of the menu though are the cacio e pepe butter beans — the beans are cooked until tender and creamy with Pecorino Romana and tons of cracked black pepper, served with a slice of toasted sourdough focaccia (pro-tip: order an extra side of bread, you’ll want more)
The kitchen has also been known to add a lamb belly version of the dish to the menu in winter time. Threaded with slivers of sweet, rich meat that melt in the mouth, it is — if possible — an improvement on the original.
